Strawberry Almond Salad with Balsamic Dressing
Serves 2-3
Strawberry Salad:
- 6 oz baby spinach or spring greens (or mixed)
- ¼ cup roasted almonds (coarsely chopped)
- 2 TBS crumbled blue cheese
- 2 oz Strawberry Balsamic dressing (recipe follows)
- 4 strawberries per plate (sliced)
Toss greens with dressing, almonds and blue cheese. Place in the middle of a salad plate with the cheese and nuts on top. Arrange strawberry slices around the salad.
Balsamic Dressing:
- 1 pint fresh strawberries
- ½ cup Melina’s Balsamic Vinegar
- 1 ½ cup Melina’s Extra Virgin Olive Oil
- Kosher salt, to taste
- Ground black pepper, to taste
Puree strawberries, balsamic vinegar, salt and pepper in food processor until smooth. Slowly incorporate the Olive Oil.
