Strawberry Almond Salad with Balsamic Dressing
Serves 2-3

Strawberry Salad:

  • 6 oz baby spinach or spring greens (or mixed)
  • ¼ cup roasted almonds (coarsely chopped)
  • 2 TBS crumbled blue cheese
  • 2 oz Strawberry Balsamic dressing (recipe follows)
  • 4 strawberries per plate (sliced)

Toss greens with dressing, almonds and blue cheese.  Place in the middle of a salad plate with the cheese and nuts on top.  Arrange strawberry slices around the salad.

Balsamic Dressing:

  • 1 pint fresh strawberries
  • ½ cup Melina’s Balsamic Vinegar
  • 1 ½ cup Melina’s Extra Virgin Olive Oil
  • Kosher salt, to taste
  • Ground black pepper, to taste

Puree strawberries, balsamic vinegar, salt and pepper in food processor until smooth.  Slowly incorporate the Olive Oil.
